Carbohydrates are an indispensable staple in modern diets. Foods such as rice, bread, rice cakes, and noodles are convenient and delicious, but excessive intake can have detrimental effects on skin health. Carbohydrate addiction, in particular, accelerates skin aging and is a dietary habit that those aiming to maintain a youthful appearance should be cautious of. Recent studies and clinical findings have consistently revealed that excessive carbohydrate consumption damages collagen and elastin in the skin, leading to various signs of aging such as wrinkles, sagging, and dull skin tone.

The Hidden Culprit of Skin Aging: Glycation

When carbohydrates are consumed in excess, the body breaks them down into simple sugars like glucose and fructose for energy. However, if there is an overabundance of sugar in the bloodstream, these sugars bind to proteins such as collagen and elastin in the skin, causing structural deformation. This process is known as glycation, and its by-products—Advanced Glycation End-products (AGEs)—act as key accelerators of skin aging. When AGEs accumulate in the skin, collagen and elastin become stiff and lose functionality, resulting in decreased elasticity, deepened wrinkles, and a rough, dull complexion. Most concerning is that once collagen is damaged by glycation, it is nearly impossible to repair, making glycation a far more dangerous aging factor than oxidation.

Refined carbohydrates—such as white rice, white bread, sugar, cakes, and cookies—are highly processed foods stripped of most fiber and nutrients. These foods rapidly raise blood sugar levels and sharply increase insulin secretion, which in turn accelerates the glycation process. As a result, collagen and elastin in the skin are quickly damaged, leading to skin sagging and wrinkle formation. Additionally, refined carbs promote fat accumulation, which causes unnecessary fat deposits on the face and body, exacerbating facial sagging due to gravity.

These habits also elevate reactive oxygen species (ROS), adding oxidative stress to the glycation burden and further accelerating skin aging.

When AGEs accumulate in the skin, collagen and elastin are degraded, resulting in a loss of skin elasticity and smoothness. The skin becomes increasingly dry, wrinkles deepen, and the complexion takes on a yellowish hue. AGEs impair the regenerative function of skin cells, diminishing the skin’s ability to repair itself. Glycated blood proteins also reduce the elasticity of blood vessels, restricting healthy blood flow to the skin and causing dull skin tone, increased keratin buildup, and the emergence of pigmentation and blemishes.

To prevent skin aging and maintain a youthful appearance, dietary modification is essential. Replace refined carbohydrates with fiber-rich foods such as brown rice, whole grains, and vegetables, and minimize the intake of sugary foods and beverages. Maintaining stable blood sugar levels through regular meals and moderate portions is also crucial. Adequate hydration and a diet rich in antioxidants help reduce oxidative stress and protect the health of collagen and elastin in the skin.
